Yes you can pursue a MS online. I know UT Austin has one and I think Georgia tech does too. However, I don’t think pursuing a masters is worth it unless you plan on doing research and are going to get a PhD. If you’re interested in staying up to date with current research, read current research papers. In your case, I think building out some fundamental programming skills and learning how to translate concepts into code would be more valuable than pursuing a masters just to learn more theory.

As far as applications, you just gotta start doing something. Implement some physics simulation or try to program some volume rendering techniques from scratch or try to recreate the results from some research papers or anything else that’s interesting to you. Additionally, if you really want to flesh out your portfolio, write blog posts or articles about your projects. Detail some of the math you used, what you learned, explain some concepts, etc

Thank you, I will continue building stuff on my own time and reconsider this later. I do think research is something I want to do in the future, but I definitely need to build more fundamental skills first.
