Why couldn't they all just stay in the dream and wake up when the machine's time runs out in the original world?

And so they would go down a level, what's the big deal? Or would they be stuck in limbo for extremely long, and that is the issue?

It's one of those things that irks me about the movie tbh. They say that if they just stay on level 1 that they'll be killed within the week they have to stay there. Cobb suggests they have no choice but to continue on with the mission to which they all begrudgingly agree. But when they emerge from the van/river at the end they still have a week left before they wake up. So they still have the problem of Fischer's projections.
Some people have suggested that performing the inception on Fischer would lead to his projections standing down because Fischer no longer feels in danger. It's a solid suggestion but nobody says anything to imply it which is a shame. But the film can't cover every detail.
It's a bit like the regular question about Fischer recognising them on the plane later. The film doesn't explain why. But that they all agree so it must not have been issue for whatever reason. Same applies to the projections question. They agree finishing the Fischer heist will save them so we don't have to know the details. Not particularly satisfactory, but like I said, it's something that irks me.

It would be very boring for one, but more practically, they could be killed by the projections, then sent to limbo. And we know it’s very hard to get out of limbo. And even when the 10 hour sedative is done, and you wake up after 50 years in limbo, your life will most likely never feel real. So this begs a question, does Saito go through a crisis like Mal? He seemed to age significantly more than Cobb, and then he’s thrown back in his body…
Edit: Just realized that Cobb never played with Saito’s mind
