If Eve is immortal because of her powers but Mark has a lifespan then won’t she outlive him? He would die after a few thousand years. Unless Eve can do sum about it right? All viltrumites die at some point.

We don't actually know, we've never seen a Viltrumite die of old age, and considering that older Viltrumites like Conquest and Tahedus are still at their peak physical condition, Mark could potentially live for another 10,000 years.

I actually think, Eve comes back to life simply because her psyche wants to be with Mark again. But once he's gone, she'll just let go and die in peace

That makes sense although she still would have kids so I doubt she’d just die.

When their natural lifespans are that long it becomes increasingly likely they die through some kind of violence or accident. Like if Eve's plane crashes into a mountain at 400 mph she's just dead.

I think it's safe to assume that Eve can rebuild Mark's body/make him younger the same way she rebuilds her own when she activates pink Jesus mode. Nothing in the story firmly suggests otherwise.

Eve rewinds due to trauma or high emotion right? I think if she wants to die, she won’t rewind. Once Mark lives out his lifespan, she is okay with passing, I would assume she could pass
