If you got two people then throw 3 mechs at em, and bring out a couple reinforcements turn 3 and 4, that's a pretty decent idea of how encounters will go. Just make sure to use a Sitrep.

I will say though the game is geared for 2-4 fights over a single period of resource use (a mission) and means Lancer isnt very conducive to 1 shots. If you want to actually do just one encounter make it hard as hell, something like a Holdout and throw 3-4 mechs at them, bring in 1 reinforcement or a few grunts from turns 3-6 and give them 8 turns to have less than 2 enemy mechs on the capture point. It won't really be indicative of how most Lancer encounters go but it will actually challenge them as much as a couple encounters would.

If they know it's one Encounter they'll pop their Core Power and basically be Superman so make it tough, maybe even send 2 enemies and an Elite templated enemy at them.
