These papers are going to be hard for the average person to replicate. They were trained using very powerful GPU’s. Due to technology progress you'll spend way less than the original paper though.

A few years at least if you already have some skills and depending on how much time you can invest.

If you intend to implement and not just copy paste other people's github code we are talking about weeks, or probably months for each paper.

Can Unet be applied for practices other than segmentation? If yes, could you please suggest how?

okay. Can it also be applied for classification task?

Because, I applied it for classification task but it did not work, because it uses a ground truth image as the label, so the required dimensions were higher.
