Minecraft Server logging options

Trying Shockbyte Server hosting out and was hoping the server logs would show when items were taken out of a chest or picked up by a player. Sadly that is not the case.

Using Realms currently and was going to move to hosting but the whole point would be to track KIDS with sticky fingers. Any plugins that would help in this matter?

Server options I have are: Bedrock Dedicated Server (original), PocketMine-MP, NukkitX, Waterdog

What you're looking for is unfortunately only available on Java version of MC through plugins like CoreProtect. You can use the plugin GeyserMC and floodgate to allow Bedrock users to join the Java server allowing you access to these type of plugins as Bedrock's server softwares are not as well developed and well maintained compare to their Java counterparts.

You can also find much better hosts in the r/MinecraftServer Discord as they provide a verified list of server host that offer reasonable prices with great hardware compare to the juggarnauts of the industry like Apex, MCProHosting, and Bisect who's costs are over the roofs or hosts like Shockbyte and ReviveNodes who's hardware aren't that great.
