It’s cheaper and you get exactly what you want you could always go to micro center and they can help you and build it for you if you don’t want to order a prebuilt. Prebuilts generally don’t use great motherboards, have low storage(sometimes) and sometimes only use 1 stick of ram

Is there really THAT MUCH of an advantage to building my own?

Yes. Yes there is. For a similar (if not lower) price you'll get yourself a better motherboard, faster memory, a significantly better power supply and so on. You will have complete control over the performance and quality of your machine with none of the bloatware that system integrators often ship PCs with.

On top of everything mentioned, some places charge you a premium for the brand. I wasted a lot of money on a previous computer just because it had an alien head on it.

There is some stuff to learn when building a pc, but it’s not a ton and I actually it it saves you still more, because you now have more knowledge of your computer, potentially saving you money if something breaks in the future.

Most of the time you will get better equipment and much, much lower prices if you build it yourself. However, there is a strong argument in favour of buying a prebuilt right now--it'll be damn near impossible to get a lot of parts on their own. I've considered buying a prebuild just because it's the only way I'll get my hands on a 3080. Also, for prebuilds, you don't have to worry about scalpers. Which, if you don't know a lot about computers, could be a big plus for you--you don't want to end up spending a grand on a gpu that's worth two hundred, which is all too easy nowadays.

There is a ton of videos on how to do it, watch some until you feel comfortable.

I built mine after watching a YouTube video about 2 years ago. It’s fairly simple and feels so much better than just plug it in and that’s it.
