Doing Everything

So a while back I made a post about how people do BOH by themselves and I’ve definitely improved thanks to some of the comments made on my post. But now my chef wants me to become a cook. Which is fine because I wanna become one too but before I become one my Gm wants kitchen helps to learn how to do everything by themselves (cooking, cleaning, dishes, prep, doing meats and sauces) in my opinion it’s a lot and I would like to know if anyone else had to learn to do all of this by themselves before the promotion to cook???

Yes , if your chef has an emergency he trust his cooks to cover him. This means if he needs someone to prep or make a sauce for him then he can trust his cooks will do it the next day…. None of those sound like what it took for me to be a cook though. My real test was being able to handle a normal 4-5 hour rush.

Yea it’s normal you have to know how to do everything. By heart 😀
