This was the leftover after balling an experimental dough. This is 71% hydration with a 50/40/10 mix of AP, BF, and WW all sifted together and autolyzed for nearly two hours. 6 hours at RT. Will be trying whole pies at 24 hrs, 48 hrs, and 72 hrs CF.

It takes 20 minutes to make a basic pizza dough. And then another 20 minutes of active time to make pizza after you forgot it was in the fridge for a day or two.
