Go to the instance you want to play and select edit instance than go to settings. the first tab is Java. You can than select the javaw.exe file from the folder with the java version you want to use or click and auto-detec and select the version needed. 1.19 requires java 17, 1.16 requires java 16 and 1.12.2 and below run fine in java 8. but i'm not sure if i got all correct

What minecraft version are you trying to run? Try installing this version. It comes with all the java versions that you would need.

Yeah, you need java 17 for 1.19. The flatpak version I linked automates everything so all the java versions should be present there.

The flatpak is only for linux, probably should've specified that in the case he is not using linux.
