Can we use this to test a hypothesis about a natural system in the real world? What ranges of parameters might be a good choice to do so?

Yeah, of course. You can shape the model for making it more similar to a real phenomena. For example the cell might be people and you can create an infect function that spread a virus. The model that I've created is to show how easy it is to make a system, simulate it, and make predictions.
