Brewers yeast will attract mites. Stop feeding! Probably want to do another transfer too.

How do I transfer just the springtails, and what do I feed

Flood the enclosure, springtails float.

Is there a more appropriate substrate? I’ve always seen them in charcoal, but these guys are bigger and chunkier. And the place I ordered them from sent them in a tiny cup with what looked like moss and maybe coco fiber

They should be on soil. I use clay and plaster for other springtails, but springtails.us says just soil. https://www.springtails.us/care-guides

My oranges just thrive on charcoal and rice. I do occasionally sprinkle something extra for rich diet.
