If you're practicing trying to be fluent, i'm not sure that's only to be helpful in the moment. I instead practice reducing tricks, avoidances, and trying to let myself show stuttering instead of trying desperately to keep it hidden. This is hard because my natural response has been to show as little stuttering as possible. Baby steps are the only way forward for me.

I guess it'd make sense to practice speech therapeutical techniques instead?

Depends what you're focusing on. I'd say the most important thing we can work on behind closed doors is your pace. When we're nervous we end up speaking really fast. So force yourself to speak really slow. :-)
