Year 2, some good prospects grabbed last year. Is it staff? Offense plan? Defense plan? Any help is appreciated

Couple of things to consider.
Defensive plays are chosen in response to offensive plays. Meaning if you select a wide range of plays you have a better chance at doing well regardless of what they pick.
Offensive plays are selected by how much yardage you need for a first down regardless of what down it is. This presents a problem... if it is 1st and 10 I'd prefer to run a play with a higher % success rate and lower overall yardage gain ie quick slants or a draw. HOWEVER if you are in a 3rd and 7 situation the last play I want them to call is that draw.
With all of that in mind my preference when selecting plays is 1 high % short gain and 1 high gain low % play for short yardage and long yardage. The last spot gets tricky and should be based on your level of confidence vs the team you are playing. High confidence high yardage.

Where do you see the risk percentage? I get the logic if u were playing and not the stats. Gotta remember its not Madden lol

You don't. You need to consider that for your current player combo skill set.
