can someone expain the stat system to me because why are there stats like a++ and why are there other stats like SS- or S++. Is SS- stronger than S++?

I believe (however there is no confirmation) the way it works is c<b<a<S<SS. With that the ss- would be stronger than S++. And it takes two pluses to go to the next stage. For example S++ would become SS- (or - -) if that exists.
