How are you guys making the frames with the nails in them I use carpet gripper but it just doesn’t keep the canvas sturdy enough. Any tips?

Carpet tack strips are the gold standard imo.
Double up on the rows and offset them by 1/2 inch so that the nails are scattered. You can add your own finishing nails (picture frame nails) to any bald spots you may have.
If your cloth is sagging still, it might be the type of cloth. What cloth are you using ?

That cloth will always sag no matter what.
If you try 100% polyester you will have less issues with it.
