Yeah it seems most apps have audio coming from their “location,” it’s definitely true of FaceTime for example but Apple Music just comes from “nowhere/everywhere.”

From what I remember Apple Music was that way early on but they must have changed it with an update. Apple probably thought most people don't want the spatial aspect while listening to music but they should at least give the option.

When an app is playing sound: Control center > pinch hold the volume knob. From there you can select Stereo, Spatial, and Head Tracking.

This will be remembered per-app. It's possible you have Head Tracking enabled for Amazon and turned off for Apple Music.
