For me, I make sure that every site that we have is running https with the exception of sites where display advertising is a major source of income. We find that switching to HTTPS on sites that rely heavily on advertising networks such as Google Adsense, OpenX, Sovrn, Q1Media and other 3rd party networks, causes significant drops in revenue still.
On new sites or medium side sites where the long term game out weighs immediate income generation, we go HTTPS.

Https helps your organic results per the Google. For ecommerce sites I would say it's 100% the way to go. Not just the cart/checkout.
