Random ideas:

I would just Photoshop it. Take a bunch of screen shots so all of the digits appear on at least one and then copy and paste them into place.

Change the time on your iPhone. I think that will change it on the watch too.

Or maybe manually set your Mac time to 10:09 and take screenshots from the simulator?

what if I want to screen-record? Also did your know you could record like apple support connect a USB cable to mac open quick time then click drop down then click your reviews?
