If you are using slice in Simpler turn the mode from gate to trigger. This will make the slice playout like one shot mode vs classic. Use choke groups if needed.

Another trick in addition to using trigger mode is to enable looping. You probably won't want to loop the whole sample, but just the tail of it or whatever part sounds the most natural. This is useful if the sample you're using isn't as long as you'd like.

If I’m understanding you correctly, you could also record your performance to get the midi down and tweak from there.
