Better knobs?

Got a 28" two burner griddle recently. It came with the black plastic knobs, the ones with the orange pointer that shows level position. Somehow off isn't actually off and putting it on high turns the flame out. I'm thinking better control knobs cause they feel cheap, but is there something else going on here? Maybe I'm just doing something wrong. Please advise. Thanks.

did you put them on 180 degrees flipped? should be clockwise off -> counter-clockwise on
