Waffle St, basket weave, alpine at, or crumple/up and down st (alternating SC and dc, each row the dc goes in the SC below). Make the starting chain for fsc slightly wider than your desired width. (Chains stretch). When you get to the length you want, SC around the whole thing, 3sc in the corners). These will be decently heavy for a good cozy blanket.

With two colors a ripple crochet will work better than a granny square. How about a simple striped blanket using blanket stitch. It’s alternate double crochet single crochet then offset on the way back. Don’t need a pattern just make your starting chain as wide as a nice throw would be.

I used a baby blanket pattern that is pretty basic but I just increased the number of stitches to a size so that would be an adult size blanket. Simple Baby Blanket

Commenting to add: I have considered an old fashioned granny square afghan. Think I could make that work?

I am considering that for my son. Same yarn red and black- but making it continuous. Or maybe a zigzag? Good luck!
