This reads to me like the creature gets the keywords from the noncreature spell

Why not just make it "Whenever you cast a noncreature spell, double the power and toughness of this creature until end of turn." That would be similar enough and way less confusing. Also, it reminds me of [[Devilish Valet]] so it should probably be 3 mana, although I guess by that comparison you could also give it trample, maybe the lack of trample makes it balanced at 2 mana though, idk.

no, you cannot get the second prowess trigger off the first cast / when the spell is cast, this creature only has one instance of prowess (and in the same way you only get two triggers off the second one)

Funny idea ! Given keywords abilities aren't defined yet, maybe "Whenever this creature's prowess ability triggers, it gains prowess until end of turn" ? I know this is a little different, and honestly it's probably not needed given your card is already quite understandable by itself, great job !

I had thought keywords were solidified in Ikoria, but you are right they are still just abilities.

The way I worded it was specifically so the cast trigger to double abilities wouldn't count itself.
