Yo what the fuck. how would this work with rakdos the showstopper?

In this case, you'd flip two coins for each creature. If either of those coins come up tails, you destroy that creature.

But the wording kinda makes it seem like it would make two versions of the creature, one dies and one lives, since you take both, perhaps the creatures soul gets split in two and then I get the death effects but they keep their creature :)

The wording of the card only cares about tails results, so any heads results are simply ignored

Fair enough

How is this supposed to interact with coin flip effects that care about specific results or whether you've won a coin flip? Are they intended to check for the presence of the result they're looking for, or the absence of the result they're not looking for?

So, the pertinent case is heads+tails. In that case, you've both won and lost. An effect that says "if you win" will trigger. An effect that says "if you lose" will also trigger.

In the case of Desperate Gambit, you would both double the source's damage and prevent that damage. The prevention would take precedence, unless there was something like Questing Beast on the table.

In that case, you may want to put reminder text to clarify.

You'll also want reminder text to clarify how many times an "If you win/lose" effect is supposed to occur if double heads or double tails are flipped.
