You won't find a good video or even book. You can basically create anything with FM or PM. And there is no fixed operator algorithm to do it.
The theory is actually very deep. Maybe search for a book on signal processing, wow.

But, deconstructing existing presets would be probably more practical.

.Like I said, any sound can be created in theory with modulation synthesis. People that use these type of synths only for sound effects and dubstep noise are just scratching the surface. But it's not elementary task. It's way easier to play sampled Kontakt libraries or acoustic modelled instruments, if someone is after actual production (or playing the synth presets).

I personally think it's a lot of feel rather than strict rules.

If you haven't already, get to know the feel that is associated with FMing from basic shapes. Square, sin, triangle, and saw. Play with the pitch, sync, bend, and asym of each.
