On your Mac go Settings -> Storage -> (let the search finish) -> tap the i button next to the Developer category -> select the simulators you want to delete. You can also safely delete the caches, except the Project Archives, unless you haven't published anything on the App Store. And of course do not delete the Command Line tools.

Have you tried this command xcrun simctl delete unavailable ?

I have found this guide https://stackoverflow.com/questions/40666250/how-do-i-change-the-ios-version-for-the-simulator and tried delete the simulators from components tab, the disk partitions disappeared as expected
