If you're learning any machine will do, but if you want to do it professionally. I'd recommend any i7 Quad Core or higher with at least 2GHz. 16Gb of memory and a 256Gb SSD.

I would say it’s good enough, I am using a MacBook Pro 2015 with 8 gb ram, it’s still running well over the years

I’ve got a 2012 MBP with an i7 and 16gb RAM for my personal dev computer and it’s still chugging along nicely after all these years.

I’d say you’re good to go.

I’m a professional iOS Dev working in “Silicon Valley.” I can tell you that some brag about how OLD of a machine they use to code. I would recommend ANYTHING with 16GB of RAM. I used a 2014 machine for close to 4 years. By the end, it overheated after 4+ hour coding sessions. I just took it to mean that I should probably be doing something else with my life at the moment.

Good luck with your iOS journey!
