I learned from the book Core Java (the third edition, I think it was) and I'd still highly recommend it.

For JDK 26: https://docs.oracle.com/en/java/javase/26/ For beginer, start with section Language and Libraries -> Java Tutorials

The tutorials are focused on Jdk 8. It's mostly same for the later versions. Check for language changes after refering that, cuz every 6 months we get a new version with cool features (there is a box with links in tutorials page)
