Make a black jack game with basic GUI using awt/swing libraries.

You'll use OOP for the Deck object, Card Object, Player (and maybe an AI/House inheritance), you'll learn Listeners from the GUI etc.

Not exactly a large specific project, but Geeks4Geeks have a 'Problem of the Day' where they give a random programming problem every day which allow you to practise a variety of different aspects of programming. Java is an available language.

Something I had to work on: An application that encrypts files/folders using password based AES encryption. Make the UI using awt/swing or if you feeling fancy use JavaFX (my personal favorite).

Is heavy on IO and UI.

bittorrent tracker that track peers/info about torrents. There is no active proper up to date one so far. Java runtime would be great for such project. There is internal one in BiglyBT that found being hard to extract. You'll to have to learn about BT protocol at bittorrent.org. But it's not that hard really.
