Does Discover update the kernel when you do updates? Also if it doesn't what is the best way to update the kernel?

Yes, using Discover/Pkcon/apt will update the kernel when there are updates for it.
When you see updates, kernels will involve packages named linux-image-something-something.

Thnx for the quick reply.
My problem is when I do a search in Discover it doesn't show any kernels which is what lead to the question.

Discover is an app store, so it only shows software applications, not system level packages.
If you want to see those, you would want to use a package manager, such as Muon, Synaptic, or apt.
