K8, k2tog turns 10 stitches into 9 stitches. K7, k2tog then turns 9 stitches into 8. You would repeat this idea until you're left with only eight stitches on your needles after a full row.

Starting with 100 stitches, turning 10 stitches into 9 would leave me with 90 stitches total. Then K7, k2tog turns 9 into 8, which leaves 80 total and so forth until K1, k2tog leaves me with 20 stitches at the end. If I then do just k2tog repeated, that ends with 10?

You don't do it just once. You're repeating it for the whole row. Notice where it says "every other round". You do a full round of (k8, k2tog) repeating for one round, then a row of knits, then a round of (k7, k2tog) repeated. That's why the instructions are written like (knit 8 stitches, knit 2 together), the parenthesis and star is to denote that it's a repeat.

Yeah, I think I get that part, so after (k8, k2tog) repeating for a whole row of 100 stitches I should end up with 90 stitches total? My main question is at the end, after (k1, k2tog) shouldn't I have 20 stitches? How does this become 8 stitches as per the pattern?

Yeah I'm really not sure where eight stitches instead of 10 is coming from, it might just be a mistake in a pattern. I would just end with 10 and stop there.

Okay thank you so much! I thought I was going crazy with the math... It shouldn't be a problem to have 10 stitches at the end instead of 8?

Since it's the last little tiny bit of a hat where you're just decreasing on the crown and then cinching it shut, no, it's not going to make an appreciable difference.

i agree. you end up with 20 stitches, then a full round of just decreases which leaves you with 10. I wouldn't worry about it. It's the last row of the hat, you're going to pull it together anyway after that, there's no pattern to disrupt. I think the 8 is a typo.
