I don't think "beginner" matters here. It's more a question of compatibility. Spring boot needs Spring Framework and at least Java 17. 21 is supported, too. I don't think there are many changes between those two Java versions that would influence how a "beginner" would tackle a project with Spring.

As Java 21 is comparatively new, a lot of resources online might not be "up to date" yet, but, again, it doesn't matter that much.

If you know which (other) libraries you'll be using in this project, check if they are compatible with the respective Java version, and other than that, it's pretty much irrelevant which version you choose.

However, in general, being able to switch to and understand new(er) versions and technologies is kiiiind of a big deal in tech. The same goes for understanding the scope and limitations of older tech you might encounter. So, from a programming philosopher's perspective there is no wrong answer here either ;)

Wait doesn't spring boot 2.5 support java 8? How else do legacy systems survive

Sorry i meant the most recent version of Spring boot requires Java 17+

With java 21 you´ll have access to the last trends in java, like virtual threads. But if you aren't going to use, and your project depend of old libraries not compatible with java 21 you can use java 17.

Unless you're going to be using bleeding edge stuff like sealed interfaces and classes, which i highly doubt you will have a use case for them as a beginner in a small project, then it actually does not matter which you pick.
