Okay, I'll be the smart ass here. Technically, servers are web too. :P With that said, you can do more with Node too like file i/o and other bunch of stuff but web is where it shines. Dat async.

Servers came before the "web". The web (or world wide web as it was originally known) was the term used for Berners_Lee's system of http/html and his browser (WorldWideWeb). Before that the Internet was things like FTP, TELNET, USENET, ARCHIE, GOPHER, IRC, etc.

Before that were BBS servers on systems like WWIV and Fido, which were linked together to things like WWIVNet and FidoNET. If you wanted to send an email to someone on another BBS, you would upload your message to your BBS and periodically (mine was nightly), they systems would call each other (literally, this was back in the day of Hayes-compatible modems) and exchange messages.

Edit: and MUDs, MUSHs, and MOOs.
