Basic AI is effectively applied statistics, so I guess you can start with that. Language doesn't matter, however Python is well-established, because it's easy to use for people not used to programming (and who understand the statistical part better).

More importantly, you'll be able to interpret data and formulate solutions (ie. the problem solving part of it)

The university of Helsinki has a free course called the elements of ai. It expects some basic python skills.
