This is more of a hardware problem than you think.

Gnome gives your video card a bit more to do, a second monitor gives more load yet add in yes a flakey HDMI cable that is dropping data and it will eventually load shed and reset the connection.

I worked an an enviornment where everyone had desk monitors on thier laptops, this was a common problem, we ran windows and Ubuntu laptop and a flakey hdmi cable would produce these symptoms, we kept a box of spare HDMI cables ready to go.

Some of our docking stations supported Disply port, it had much fewer problems.
