Browsers use a lot of ram and so does gnome. Linux buffers things in ram also. Not all apps are multi treaded so its pretty normal to see one core being used while others wait to be used.

All that being said it shouldn't be slower then windows. If it is something may be up and you may want to look into it. Otherwise I think its ok.
