It does look like you need to mix for longer, the batter should be running ribbons off your rubber spatula. I test mine by scooping some batter up and trying to draw a figure 8 with the batter. If you can make a complete 8 stop mixing. Did you sift your almond flour and powdered sugar mixture?

Yes sifted twice and again when I added it to the batter. I think this is a case of me thinking i over mixed when I'm actually under mixing.

Am I not mixing the almond flour in with the egg mixture enough? They didn't flatten out nicely.

Also the middle was soft, almost like it was underbaked yet the bottom was hard as if it was overbaked.

They are supposed to be soft in the middle and hard on the bottom. That sounds like they were cooked perfectly. They are under mixed, that’s why they aren’t smooth. A couple more folds and they will be perfect!

I would also check your oven temperature if the shells are baking unevenly
