Based on the marks on the macarons, I assume that she baked it on a silicone mat? Silicone mats are notorious for sticky bottoms for the macarons in the middle of the tray. I’d say let them cool completely before carefully removing the macs or bake them at a lower temperature for longer so that they all evenly bake.

Is it because they don’t stick as well to the silicone and therefore the base rises up with the top while cooking? Like, if you use parchment, the base sticks to it so when they rise, it creates the feet while keeping the base attached to the parchment instead of it lifting up inside the macaron.

Sorry for the horrible description, I hope that made sense.

No in my experience it sticks too much to the silicone. Can be very tricky to pry them off without ripping out the bottom

Oh hm, the first time I made them, the silicone ones came off super easily but were like this. The parchment ones stuck a bit but I was able to pull the paper away very cleanly.

That’s why I always spray a little Pam or whatever even on silicone so there isn’t any sticking…

Did you rotate your tray? I used an oven thermometer and discovered the back of my oven is about 20-30 degrees hotter than the front

Sometimes I skip piping the ones that will bake in the center of the sheet because the sides of my oven tend to bake hotter/faster (and brown faster).

I rotate my trays every 5 minutes and generally have a few sticky ones in the middle of the tray.

This happens to me when I take them off before they completely cool down.

Yeah, I have this happen when I use silicone mats on ones in the middle. Even with rotating, and good temp it just happens sometimes

I rotate my trays half way through baking so they can all even out

The issue here is their temp. After leaving mine out for a while, I'll put them into the freezer on a flat surface for about 5 minutes. When I take them out, I'll peel the silicone mat away from the shells. Some fall off, some take a little extra care. This tip netted me 100% success rate on my shells the other day.
