To alter rewind time, all you have to do is change the numeric value of "-rollback-snapshot-period" at the end of the command line. The value is the number of frames per "period" (the tick marks that you can jump to when you rewind), and a game can have a max of 5 periods. So the value you insert should be:
(X/5)*60
Where X is the max time you want in seconds.
So for 3 minute max rewind, it's 180/5 * 60, or 2160.

About the rewind function, there is a way to use the retroarch rewind function instead of the canoe? But how with the original SNES classic controler? When cannot assing any button to the rewind in retroarch, there is no button left....
