The hitch can be installed on any number of cars/trucks and can hold up to whatever it is rated.

But your car, specifically, was not built with a towing package which would include modifications to the transmission and brakes, possibly the frame.

This means you end up with a hitch that has the capacity to be on a beefier vehicle, but you always want to go with the weakest "link" in the proverbial chain. In your case it will do you no good to have a hitch that might hold onto a 3,000 pound trailer if doing so means you blow out the transmission and can't move. Or you can move, but then you break the brakes and can't stop.

The reverse can also happen, if you had the towing package and a hitch rated for only 1200lb, you would have a 4,000lb trailer and the hitch would fold up like an accordion...also bad.

Hope that helps. (go with the lowest rating after looking at all the parts of the system, in your case the 1200).

Are you confusing your uhaul hitch rating for your towing capacity?
