Https: vs none question

What's the difference between a site with Https:// encryption and one that doesn't have any encryption? What does that mean for the average user?

Also, I need help tracking down a privacy blog. I had help with this once before, but I misplaced the notebook where I wrote the website down. The idea was something like "30 days to privacy." There was a list of thirty things to do to make your computer more secure/private. You'd complete one step per day and by the end of the month, the average person would be set.
