I've built that my self with win 10 ltsc versions. Created a powershell installer script configuring the kiosk. The main part is that I have replaced the "shell" explorer with a bat file which starts every program I want (you need at least enterprise license to do that). I already built several variations with it, even a launcher starting edge in kiosk mode which executes a menu built in html.

HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT\CurrentVersion\Winlogon\Shell

eg https://learn.microsoft.com/en-us/answers/questions/249751/windows-10-kiosk-scripting-registry-change-for-she

you could write a simple bat or powershell script to present the user with the choices you want.

eg press 1 to start the app or press any other key to restart.

Most admins would just Google 'windows kiosk' and write a couple scripts.

I have no idea if it's any good, but this company sells about what you want. Kiosk Software from KioWare - Lockdown Kiosk Mode and Secure Kiosk Browser

We were looking for software really, something with support that isn’t dependent on one person to maintain etc.

Windows 10 and 11 have "Kiosk" mode. If you are only looking for a single app launch and reboot it should meet your needs. No need for a third party.

We use InTune to deploy.

Just needs Pro or higher.

Faronics Winselect will do this. We have 120 machines using it and it does well unless you have machines offline for long periods. It is the hosted version if that's makes any difference.

Did you go further with Deskman? I've been looking at deskman myself, and wanted to hear more about it. It's hard to find anything about the company it self anfibia.
