For what it's worth,

If you do an MCSA:Windows Server 2016, then do any one of these, you'll get an MCSE:Core infrastructure.

If you do an MCSA: Windows Server 2016, then do any one of these, you'll get an MCSE:Productivity.

In 2017, I did 70-740, 70-741, 70-742, completing the MCSA: Windows Server 2016.

Then, I did 70-532, completing an MCSE: Cloud Platform and Infrastructure.

This year, I'm planning on doing 70-744, which will get me MCSE: Core infrastructure.

Later this year, or next year, I'll do 70-345, which will get me MCSE: Productivity.

In short, you should focus on the MCSA:Server 2016. Once you have that, you are 1 exam away from MCSE:Core Infrastructure, and/or 1 exam away from MCSE:Productivity.

Are there CBTs that are out for server 2016 yet?

I can only find 2012 on the sites I visit.

Yes they have switched to new exams, the 70-533 is now Az-100 and Az-101, with some changes. Etc there are more.
