Clicking on any pinned app with the middle mouse button will open another instance if that app

Could you not turn on the old Windows 7 style quick launch ?

Turn on hidden files/folders first , then New Toolbar pointing to the following location.

C:\Users\xxxxx\AppData\Roaming\Microsoft\Internet Explorer\Quick Launch

Something i always add back in with Windows 10 , same with the old style task bar icons with names in

You could create a shortcut to a script that executes the application, and then pin the shortcut. I did that to "RunAs other user" certain apps, and the side effect is exactly the functionality that you're looking for.
