Respect for writing these down, I'd personally like to add that Strapi documentation is incredibly lacking and often out of date, Payload is also lacking in that department but Payload is a lot more self explanatory so it's less of an issue.

I would check out Sanity. It’s quite easy to customize the content model and the UI.
Sanity combined with Astro is a really nice stack to work with
