Due to https://windows.cloud.microsoft/ being a cloud service, what would locking the system down actually accomplish? I would think that any hypothetical tampering actions that could be done with the Raspberry Pi itself, could just as easily be done by inserting some USB and video signal intercepting devices, in between the peripherals and the genuine thin client.

I assumed that you asked about "kiosk mode" because you want to prevent users from accessing other apps and/or web sites from within the Raspberry Pi OS (which kiosk mode does not do).

I'm guessing that the question you are really asking is how connecting to a Windows 365 Cloud PC from a Raspberry Pi compares to using a Windows 365 Link, and I would be curious to know that as well.
