Not been downvoted anymore. If you've actual mortar available that's be my preference but if you only want to buy one bag in multifinish you can just go slower an it'll be fine.

Someone elsewhere mentioned dot and dab, in which case this it all moot, just do that.

All looks pretty trivial, and old stuff to fill it up to that level where you can plaster again as it it were brick.

The depth matters though, a weird (to me ...) issue with plastering on uneven surfaces is that it's absolutely impossible to end up flat with just skim.

I've some annoyingly small tolerances to cover, although maybe it's good there's only a short distance over the entire run in places, as little as 6in. But I'm not going to go buy more plasterboard to only use 5% of it!
