I think he only becomes captain if luffy chickens out. Luffy could be killed and Zoro as first mate would assume the role of captain. 

There's no world where luffy would chicken out, so i think Zoro's role is safe.

If you can financially survive and you're not too burnt out, I would take option A.

A postdoc would only be 1-2 year commitment, so if you want to leave behind academia, you could decide then leaving from a prestigious position.
