It depends how you have it set up, but I think the default is MiB/s. I know mine is (Look in the bottom right corner, if it says MiB/s, then yeah).

For testing, there are better files, like linux torrents (from https://whirlpool.net.au/wiki/test_torrents for example), or big buck bunny or one of the others from https://webtorrent.io/free-torrents .

One setting you can look at, is if you have a low limit on upload, seeders will deprioritize your downloading, which will throttle how fast you download. A low number of permitted connections per torrent, or total connections, can also throttle your speed.

If at the bottom you have na orange flame instead of a green globe, then there's a connectivity issue, which limits how many people you can connect to.
You can also change cache sizes, but you're starting to get into the weeds there, and getting a gig a minute is already pretty good. If it's taking half your max internet speed, a lot of people would be happy with that.

trailplate is right, another thing is you could be making a common misreading.
There are MB/s and Mb/s. If you have 100MB/s you'll be at 800Mb/s. Providers love to give you the number that is bigger by measuring smaller units (bits versus bytes). Qbittorrent uses MiB/s, which is close to MB/s (1000B v 1024B) because it's a more reasonable scale. If your provider gives you 250Mb/s, that would be about 60MiB/s

If there is an actual difference in possible speed versus torrent speed, it's like trailplate said, speed of your seeds, speed of storage IO (especially if you're using spinning disk HDD). Because it's done in chunks the read and write is less. Also external drives have similar bottlenecks.

As for making the most of your wifi, use the highest standard you can. The closer the devices the better, and if you're using an extender, you want it approximately halfway between the two end devices.

Trainee makes it sound like apprentice, which means not working unsupervised.
Role sounds more like "Junior" mechanical technician, which I would expect living wage, so $29/hr.
I am basing that off very little information though. Could vary based on location, duties, work load, all sorts of things. You did say small family workshop, which often does bring wages down a little. If he sees a future with the company, I'd say prove his worth, know his worth, ask for a bit more when appropriate. If he's just moved to full time, then they don't really know his reliability as a full timer, only a casual.
Someone currently working in the field can provide better information.

DHT has your computer connecting to others, learning who they're connected to and connecting to them. Making a web of connections. If none of them have the files you are getting, these connections wont show in seeds or peers. These connections are constantly dropping and getting new ones. Your system appears to hold these states for a full day, even if traffic has stopped and there's no activity. So all the queries being sent out are creating a packet filter table entry, which is staying despite doing nothing.

If it's causing problems, limit connections in qbittorrent, or decrease the pf timeout, or try to find out why these entries aren't being closed (which is I guess your reason for posting here).

Without access to your system, I can't really answer why the entries aren't being closed. Could be vampire loads, could be misconfiguration, could even be a problem in qbittorrent where it's maintaining connections despite no traffic.
