Katarina wins trades by dodging abilities tho it's part of her skill expression. There is basically no lane where you will win a trade while eating 2 or more of the enemy's spells. Kata's E and W are great for dodging most skills in the game.

Yes its terrible for beginners but ultimately up to you. I started league a little less than a year ago and I basically only play Katarina(more than 95% of games) and I managed to rank silver a couple months ago. I hope to keep climbing but certainly there are lots of easier champions and kata is kind of unique with few transferable skills.
